Chasing a Plate Cooks is all about recreating food we have eaten on our travels in our home kitchen. Today we’re recreating one of Nepal’s most popular foods, mo:mo. We ate the best buffalo momo at a no-frills joint in Kathmandu on our recent trip. We ate there a number of times and became addicted to the lean buffalo dumplings and creamy jhol aachar (a soup/sauce) that they served at the table with the mo:mo. Make mo:mo at home (Some thoughts… Below are the ingredients we used on the day. If we were to make mo:mo again we would try and find a blender to make the jhol aachar as it was nowhere near as blended or as smooth as the one we ate at the restaurant. We’d also add more sesame seeds and perhaps grind the seeds so that the flavour was dispersed more evenly throughout the jhol aachar plus add more coriander).


For the mo:mo filling
Beef mince (we used 500g)
Chopped fresh coriander
Finely crushed and diced garlic
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp ground chilli
1/2 tsp ground cardamom
1/2 tsp ground cinnamon 
1/4 tsp mace
1/4 tsp nutmeg
Salt and pepper (szechuan pepper if you have it)
A liberal splash of oil 

For the mo:mo wrappers
2 cups standard flour
3/4 cup warm water

For the jhol aachar
A few tomatoes (we used 5)
1 onion finely diced
4 smashed garlic cloves 
Chopped coriander (a decent bunch)
3 tbsp sesame seeds (toasted)
1 tsp cumin seeds (toasted)
1 tsp ground toasted yellow mustard seeds (or you could use fenugreek)

Literally nothing can compare Jhol Mo:Mo. I have tried so many style of food but as of yet I have never tasted anything better than Jhol Mo:mo. Personally it’s the best dish in man kind. I still salivate over Nepali mo:mo.

Try Nepal's East city Dharan pork momo HOMEMADE LOCAL MOMOS
momo filling :
ground pork meat
Ginger paste ( not too much or it's bitter … appropriate portion )
Finely chopped onion ( same amount as per meat like 1kg meat =1kg onion )
Salt to taste
Ajinomoto ( a pinch not too much )
Mix the filling all together

Tomato achar:
Boiled tomatoes (skin peeled)
Spicy chillies ( as per your spicy tolerance)
Or if you like fresh green coriander you can blend it together

Dough :
Water or Luke warm water

Hi, love your food vlogs in Nepal. Great effort making those dumplings.
Quick tip if you're reading this.
For dumpling wrappers you can use GOW GEE PASTRY from Asian shops or woolworths. Much less effort.
And for the meat mince little bit of fat in beef mince tastes great(juicy), lean meat will be bit dry. Also use good amount of minced onions and momo masala available at Indian Grocery store.
Wont taste authentic but sure will taste great. Cheers

Slightly change in receipe can do much better, 20% fat 80% meat can be better, taste will be much better, juicier momo is on top of every one choice. Try to add some thinly chopped onion, ginger and garlic paste, scallion and coriander leaves add few table spoon of hot oil and table spoon of melted butter on meat mixture. Generally we don't use nutmeg, cinnamon on momo's stuffing please avoid this.

For Achar(pickle) for cooking use some little more oil than you used on video, try to add raw cumin on hot oil let it cooked until golden brown after that you put onions, roughly chopped garlic & ginger, green chilli, let it cook for a minute or so. We don't use mustard seed on fresh pickle(if it was fermented, mustard seed is most) sezuwan pepper is most on achar, it's a key ingredients. Add coriander at least minute try add some roasted peanut as well. Pinch of turmeric powder, dry chilli powder, hug plum, will elevate your achar to nxt level. If you tried this changes you will thank me a lot.
