So you are putting cold chicken pieces into a warm water bath?????? Maybe somebody needs to go back and redo their food hygiene component of their chef course. Introducing a meat into a warm environment for hours is a sure fire way to make people sick from food poisoning. I guess that's one place I'm never eating at. Idiots.

Umm, by definition, Brine means a salty solution (look up the definition). What you are doing is simply a riff on a weak marinade; the buttermilk soak is where you're getting your flavor, definitely NOT the herb water; unless of course you simply left out the salt portion which is then just a result of poor editing.
